Ingredients for the Dough

  • flour — 3 cups,

  • boiling water — 200 ml (one cup),

  • eggs — 1 pcs,

  • oil — 3 tbsp,

  • salt — half a teaspoon.

Preparation of Dough for Dumplings and Pelmeni

  • Sift the flour; it is advisable to choose higher quality flour.

  • Crack an egg into the flour and mix well. The egg should be at room temperature, not from the fridge.

  • Add the oil and mix again.

  • Carefully pour boiling water into the flour while continuously stirring the dough. Initially, while the water is hot, you can use a fork, and when the dough cools a bit — switch to using your hands. Do not add flour or water if the dough seems too liquid or thick.

  • Knead the dough by hand until it becomes homogeneous. The finished dough should not stick to your hands.

  • Cover the dough with a towel and let it rest for ten minutes.
