In Ukraine, the prices of the borscht vegetable set have increased: how much do potatoes, cabbage, onions, carrots, and beets cost.

According to the Minfin portal, prices for borscht vegetables in Ukraine changed in January 2025.
Major vegetables used in the preparation of many traditional dishes were analyzed, and it was found that their prices have increased compared to December 2024.
In particular, the average price of potatoes rose from 32.57 to 34.70 UAH/kg, and young potatoes increased from 42.07 to 44.90 UAH/kg.
Prices for cabbage have also significantly increased, with white cabbage rising from 39.20 to 48.62 UAH/kg, while young cabbage increased from 69.93 to 85.10 UAH/kg (+21.7%).
The national price for white onions increased from 65.08 to 84.95 UAH/kg, while yellow onions cost about the same, and blue onions rose from 30.43 to 35.75 UAH/kg.
Beet prices increased from 20.22 to 25.40 UAH/kg, while carrot prices rose from 29.63 to 37.03 UAH/kg (+25%).
Overall, a trend of rising prices for all borscht vegetables was observed, with the most significant price increases for white onions, beets, carrots, and cabbage. The smallest price changes occurred for potatoes and yellow onions.
It should be noted that earlier the changes in prices for cucumbers and tomatoes after the New Year holidays were also shown.
