Vegetables to Sow in January

In regions with a warm winter, the soil is already warm enough to sow some vegetables outdoors. Those living in colder latitudes can start with growing seedlings, which will provide strong plants for spring transplanting. Here are seven crops that specialists recommend sowing this month:

  • Peas

In warm climate zones, peas can be sown directly in the garden if the soil temperature is between 4–11 °C. In other regions, it's better to start with seedlings. Linda Langelo recommends well-loosening the soil and planting seeds to a depth of 3.5–5 cm, monitoring moisture without excessive watering.

  • Peppers

Pepper seeds are sown depending on climate conditions: in zones 3–5 – indoors at the end of January, in warmer regions – outdoors. Eggplants are sown under the same principles.

  • Tomatoes

Although tomatoes are considered a summer crop, January is also suitable for sowing them in containers. Kristin Coker notes that seedlings need 8–10 weeks to prepare for planting. The soil should be moist but not waterlogged, and the mix should be light and well-drained.

  • Onions

In zones 5–8, onions are sown from the end of January to February, and in the south – directly into the soil. After 10–12 weeks, seedlings can be planted in the beds when the frost threat has passed. Langelo emphasizes that varieties should be chosen based on the length of daylight in the specific region.

  • Spinach

Cold-resistant spinach tolerates negative temperatures well. It can be sown both in open ground and in containers. The cold makes the leaves taste sweeter. To protect against sudden temperature changes, Coker suggests using floating covers.

  • Kale

Frost-resistant varieties can be sown directly into the soil if it is ready for processing. Additional protection can be provided by covers or cold frames.

  • Broccoli

January is an ideal time to grow broccoli seedlings indoors. The optimal temperature is 18–21 °C, and it's also important to provide additional lighting. In warm climatic conditions, broccoli and cabbage seedlings can already be moved to the beds.
