Step-by-step Preparation Process
First, prepare the colored jelly. Dissolve each packet in hot water, pour into shallow molds, and leave to set completely. For denser jelly, it’s better to use less water than indicated on the packaging - about 250 ml per packet. Once the jelly has set, cut it into small cubes - these will create the effect of "broken glass" in the cake.
Soak the gelatin in cold water and let it swell. Then dissolve it in a water bath or microwave (do not allow boiling). In a deep bowl, mix the sour cream (or yogurt) with powdered sugar and vanilla. Whip until smooth, then gradually add the dissolved gelatin while stirring continuously.
Cut the fruits into small pieces. The banana will add special softness to the dessert. Avoid adding kiwi and fresh pineapple, as their enzymes may prevent the gelatin from setting. The cracker can be broken into small pieces or left whole if it’s small.
Prepare a deep mold lined with plastic wrap - this will help to remove the cake after it sets. Layer the cut jelly cubes, pieces of fruit, and crackers in the mold. Evenly pour the sour cream mixture over everything, filling all the gaps between the ingredients.
Cover the mold with plastic wrap and put it in the refrigerator. It’s best to leave the cake overnight to set completely. Before serving, carefully flip the dessert onto a flat plate and remove the wrap.
