You will need:
- water (cold) - 500 ml;
- egg - 1 pcs;
- oil - 30 ml;
- salt - 5 g;
- flour - 900 g or 1 kg.
For the filling:
- meat (pork, beef, or mixed) - 1 kg;
- onion - 1-2 pcs;
- garlic - 2 cloves;
- butter - 30 g;
- cold water - 30-50 ml;
- salt, pepper - to taste.
Cooking method
In a large bowl, pour in cold water, add the egg, oil, and salt. Mix with a whisk or fork. Gradually add sifted flour, first kneading with a spoon, then with hands.
Knead the dough until soft and elastic - it should not stick to your hands. Cover with a cloth or wrap in film and let rest for 30 minutes.
For the filling, grind the meat together with the onion and garlic in a meat grinder or food processor. Add salt, pepper, and cold water - this will make the filling juicier. Finally, add softened butter and knead thoroughly until homogeneous.
Roll the dough thinly on a floured surface. Using a glass or mold, cut out circles. Place a teaspoon of filling in the center of each and seal the dumplings.
Boil in a large amount of salted water after boiling for 5-7 minutes, until the dumplings float and become soft. Serve with sour cream, butter, or vinegar to taste.
