As the owner of eight Michelin stars across five of his restaurants, he is a true expert in this field.“The key is using very hot oil. It should be heated to a temperature where the batter starts to rise immediately after pouring.”Among other tips the chef provided:

- Let the batter rest before baking to make it airier.
