You will need:
- Zucchini - 3 kg;
- Garlic - 1 head;
- Sugar - 150 g;
- Salt - 1 tbsp;
- Black pepper - 1 tbsp;
- Satsivi sauce - 485 g (1 jar);
- Oil - 100 ml;
- 9% vinegar - 100 ml.
Method of Preparation
Wash the zucchini, dry, and slice into half-rings or sticks 5-7 mm thick. Transfer to a large pot. Add minced garlic, sugar, salt, ground pepper, ready-made satsivi sauce, and oil.
Mix everything thoroughly. Place the pot over medium heat and simmer for 30 minutes, stirring occasionally.
When the zucchini releases juice and becomes soft, pour in the vinegar, mix again, and simmer for another 10 minutes.
Immediately transfer the hot mixture into sterile dry jars, close with lids, turn upside down, and cover until cool.
