You will need:

  • ripe tomatoes - 1 kg;
  • cucumbers - 1-2 pcs. (depending on size);
  • bell pepper - 1 pc. (red or green);
  • garlic - 1-2 cloves;
  • red onion - ½ pc.;
  • cold water - 200-300 ml;
  • stale bread or crackers - 1-2 slices;
  • wine or apple vinegar - 1-2 tbsp;
  • Extra Virgin olive oil - 3-4 tbsp;
  • salt - to taste.

For serving:

  • chopped tomatoes, cucumbers, onions, chili or hot pepper, croutons, olive oil.

Preparation Method

Scald the tomatoes with boiling water and peel them (optional), cut into pieces. Peel and chop the cucumbers.

Remove the seeds from the pepper, chop it. Finely chop the onion and garlic. Transfer everything to a deep bowl or blender.

Add salt, vinegar, water, and a little olive oil. Add the bread slices (if very dry, soak them in a small amount of water beforehand). Blend until completely smooth.

Taste — if necessary, add more salt or vinegar.

Transfer to a container, cover, and refrigerate for at least 2 hours to allow the soup to chill well.

Before serving, garnish with chopped vegetables, chili, croutons, and a few drops of olive oil. Serve well chilled.
