Salted cucumbers without sugar and vinegar — they can be stored in the apartment for years.
This recipe is a real find for those who do not like vinegar marinades. Cucumbers are fermented naturally, without sugar, spices, and unnecessary ingredients. They are crunchy, fragrant, and can be stored for a long time even in an apartment. An ideal option for winter preparations!

You will need:
- cucumbers — medium-sized, firm;
- garlic — 1 head (for a 3-liter jar);
- dill seeds — 1–2 tbsp.
For the brine:
- water — 1 l.;
- salt — 100 g.
Method of preparation
Thoroughly wash the cucumbers. If they are slightly wilted, soak them in cold water for 2 hours. Choose only whole, firm fruits without internal voids.
Cut the garlic head into four parts without peeling the cloves. This will ensure a rich aroma of the brine and save time on preparation.
Prepare the brine
Dissolve the salt in cold drinking water (100 g per 1 l). Pour the brine over the cucumbers, leaving 1 cm to the top of the jar.
Cover the jars with a waffle towel and leave them at room temperature for 5–10 days, depending on the temperature in the room. During fermentation, foam will appear, the cucumbers will change color to olive, and the brine will become cloudy.
When the bubbles disappear, the foam stops appearing, and a white coating forms on the cucumbers — fermentation is complete. Drain the brine, rinse the jar, fill it with clean drinking water to the top — so it overflows. Close with lids (screw or for canning).
Store in a cool place or simply in the apartment. After two days, the cucumbers are ready to eat.
