Juicy eggplants in a spicy marinade: a simple appetizer recipe no one can refuse.
Eggplants in vegetable sauce are a true source of flavor and aroma. They are juicy, aromatic, slightly sour, and have a delicate spiciness. They are very easy to prepare: first, they are fried, and then

For this recipe, you will need:
- eggplants — 4 pieces (1 kg 300 g);
- salt — 1 teaspoon with a heap.
As for the marinade, you will need the following ingredients:
- sweet pepper — 2 pieces;
- garlic — 6-10 cloves;
- sugar — 20-40 g (to taste);
- apple cider vinegar — 40 g;
- salt — 0.5 teaspoon (or to taste);
- hot pepper (dry or fresh) — to taste.
How to prepare:
Eggplants need to be cut into circles or slices, salted, and left for 20-30 minutes to get rid of excess bitterness and moisture.
Then they should be rinsed with cold water and dried with paper towels. Fry on a heated pan with a little oil on both sides until golden.
While the eggplants are frying, prepare the marinade. Cut the pepper into pieces, peel the garlic. In a blender or meat grinder, chop the pepper, garlic, and hot pepper until homogeneous. Add salt, sugar, and apple cider vinegar, and mix well again.
In a large bowl, layer the fried eggplants, generously coating each layer with the marinade. Cover with a lid or film and leave in the refrigerator for a few hours, or preferably overnight. Serve chilled as an appetizer or a side dish to the main course.
