  • Mustard (dry powder) - 2 tbsp.

For the brine (per 1 l of water):

  • Salt - 1.5 tbsp;
  • Sugar - 1 tbsp.

Preparation Method

Thoroughly wash the tomatoes, choosing firm, not overripe fruits. Also, rinse the horseradish leaves, cherry leaves, and dill sprigs well. Peel the garlic and cut each clove in half. Place some horseradish, cherry leaves, dill, garlic, and peppercorns at the bottom of a clean jar. Then tightly layer the tomatoes, sprinkling spices between each layer. Finally, sprinkle dry mustard on top. Prepare the brine: for 1 liter of water, add salt and sugar, stirring well until fully dissolved. Pour the brine over the tomatoes in the jar so that the liquid completely covers the contents. Cover the jar with clean gauze or a lid without tightening and leave at room temperature for 2-3 days to ferment. Then close with a lid and transfer to the refrigerator or a cool place for several days to mature.
