Transcarpathian chovlent is a dish that combines tender meat, fluffy barley, and beans with aromatic vegetables. It is cooked in pots, which preserves all the juice and flavor of the ingredients. Such a dinner will warm you on a cool evening and bring a feeling of home comfort.

You will need:
- barley - 200 g;
- beans - 500 g;
- meat (pork or beef) - 500 g;
- carrots - 2 pcs;
- onions - 2 pcs;
- tomato - 1 pc;
- garlic - 3 cloves;
- salt, black ground pepper - to taste;
- parsley greens - to taste;
- sunflower oil - 4-5 tbsp.
Cooking Method
Rinse the barley, add water, and let it soak overnight. Before cooking, boil it until done.
Soak the beans overnight and then cook until soft.
Cut the meat into pieces and fry it in a pan with oil. Add finely chopped onions and grated carrots, and fry until golden.
In pots, layer the ingredients: barley, beans, minced garlic, meat with vegetables, and chopped tomato. Add greens, salt, and pepper. Cover with lids and place in an oven preheated to 180 °C, baking for 30 minutes. When serving, mix the pot's contents so that all the aromas and flavors combine.
