For cooking you will need:

  • zucchini - 2 medium;
  • tomato - 1 pc. (peeled);
  • garlic - 1 head;
  • onion - 1 pc.;
  • carrots - 2 pcs.;
  • bell pepper - 1 pc.;
  • fenugreek seeds - a pinch;
  • mixed Italian or Provencal herbs - 1 tsp;
  • sweet chili sauce - 1 tbsp;
  • lemon juice - 1 tsp;
  • salt - to taste;
  • water - a little;
  • vegetable oil - for frying.

Cooking method

First, roast the bell pepper in the oven or sauté it in a pan, then peel, remove the seeds and chop into small pieces.

Grate the carrots, zucchini and peeled tomato. Grate the garlic or finely chop. Chop the onion.

In a heated pan, add a little oil and sauté the onion and garlic until golden. Then add the chopped tomato, carrots, roasted pepper and zucchini. Mix well.

Season the caviar with fenugreek seeds, the herb mixture, salt, chili sauce, lemon juice, and a little water. Cover with a lid and simmer on low heat for about 30-40 minutes.

The ready caviar can be blended until smooth. It is worth letting it cool completely for a deeper and richer flavor.
