Cubed Pickles: The Perfect Preparation for Winter Salads.

You will need (for 1 jar of 500 ml.):
- pickles — 200–250 g;
- black peppercorns — 5 pcs;
- bay leaf — 1 pc;
- garlic — 1 clove;
- hot pepper — to taste;
- dill with umbrellas — 5 g;
- horseradish leaf — 5 g.
For the marinade (for 1 liter of water — for 4 jars of 500 ml.):
- salt — 70 g;
- sugar — 50 g;
- vinegar 9% — 70 ml.
Cooking Method
Wash the pickles well, choose firm ones without damage. Cut them into cubes — as for salads like 'Olivier' or vinaigrette. Prepare sterilized jars with a volume of 500 ml.
Place a bay leaf, peppercorns, a clove of garlic, a bit of dill with umbrellas, and a piece of horseradish leaf on the bottom of each jar. If desired — add hot pepper.
Fill the jar tightly with diced pickles. Boil water and pour it over the pickles to the top. Cover with sterilized lids and leave for 15–20 minutes under a towel.
Drain the water into a pot, bring the volume to 1 liter, add salt and sugar, and boil until completely dissolved. Pour in the vinegar, bring to a boil again.
With the hot marinade, fill the jars with pickles, immediately seal, turn upside down, and cover until cooled. Store in a cool place. In winter, open the jar — and delicious cubed pickles are already ready for any salad.
