Fried zucchini with garlic for winter is an incredibly delicious preparation that brings a piece of summer even in the harshest frosts. Aromatic garlic, tender slices of zucchini, and spicy marinade create a combination that is impossible to resist. This recipe is so simple that anyone can handle it, and the result will definitely impress the whole family.

You will need:
- zucchini — 3.3 kg;
- garlic — 2 heads;
- dill umbrellas — to taste;
- oil for frying — approximately 100 g.
For the marinade:
- water — 1 l;
- sugar — 150 g;
- salt — 2 tbsp;
- bay leaf — 3 pcs;
- black peppercorns — 10–15 pcs;
- 9% vinegar — 150 ml.
Preparation method
Wash the zucchini, cut into slices 5–7 mm thick. Salt, mix, and let sit for 15–20 minutes.
Heat the oil in a frying pan and fry the zucchini on both sides until golden brown. Place on paper towels to remove excess fat.
In the jars, place a dill umbrella, a layer of zucchini, a few slices of garlic, then more zucchini. Repeat until the jars are full.
Prepare the marinade: add sugar, salt, bay leaf, and pepper to the water.
Bring to a boil, simmer for 1–2 minutes, pour in the vinegar, and remove from heat. Pour the hot marinade over the zucchini.
Sterilize the jars (0.5 l — 15 minutes, 1 l — 20 minutes), tighten the lids, turn them upside down, and leave wrapped in a blanket until cool.
