You will need:

  • egg whites - 100-115 g (3 pcs., size C0);
  • sugar - 150 g;
  • corn starch - 18-20 g (preferably 18 g);
  • roasted peeled hazelnuts - 40 g.

For the cream:

  • butter - 150 g;
  • boiled condensed milk - 50 g;
  • 33% cream - 180-200 g;
  • egg yolks - 2-3 pcs. (3 pcs. with 180 g of cream, 2 pcs. with 200 g);
  • fast-acting gelatin - 15 g;
  • water - 50+15 g;
  • sugar - 70 g.

For decoration:

  • ground almonds - 50 g;
  • stencil with a pattern;
  • cocoa powder - 1 tbsp.

Method of Preparation

For the meringues, beat the egg whites until stiff peaks form, gradually adding sugar. Stir in the corn starch and crushed hazelnuts, mixing gently.

Spread the meringue in a pan sized 36x30 cm, level it, and bake at a low temperature until completely dried.

For the cream, beat softened butter with boiled condensed milk. Beat the yolks with sugar in a water bath until thickened, then cool.

Soak the gelatin in water, dissolve it over low heat. Whip the cooled cream, combine it with the yolk mixture, butter cream, and gelatin, gently stirring.

Cut the meringues into the desired shape (diameter 18 cm, height about 7 cm) and assemble the cake, alternating layers of meringue and cream.
