How to make mascarpone cheese at home?

'Master Chef' star Elizaveta Hlinskaya shares a recipe for delicious creamy cheese that can be made at home with just two ingredients.

"You will need only 2 ingredients, 10 minutes of your Time, and delicious creamy cheese is ready," says Elizaveta Hlinskaya.

Ingredients:

  • 1 liter of cream of animal origin with a fat content of 30 to 35%
  • 1 tsp of fresh lemon juice

Preparation:

  1. Pour the cream into a saucepan and add 1 tsp of lemon juice. Don't add more, because the cheese will turn out sour.
  2. Put the saucepan on a low heat, stirring occasionally, almost bring to a boil - the cream will begin to curdle. You need to control the process, stirring all the time so that the cream does not burn.
  3. As soon as the cream starts to boil, remove it from the heat and transfer it to a pre-prepared sieve with gauze. Cover with either a lid or cling film and put it in the refrigerator for 5-6 hours. We need all the whey to drain.
  4. "Our mascarpone is ready. Transfer it to a clean container with a tightly fitting lid and store it in the refrigerator. The shelf life is no more than 5-6 days," added the culinary expert.

In total, you can get 300-400 g of mascarpone from 1 liter of cream. It is worth remembering that it is better to use cream of animal origin with a fat content of 30 to 35% and check the expiration date.
