Chef Valeriya Matrohina revealed the recipe for Monastery House: step-by-step instructions.
According to ТСН: This dessert, known by the names 'Logs under the snow', 'Spruce house' or 'Monastery house', is made from tubes filled with cherries and coated with sour cream. It will be a great addition to tea or coffee and an excellent dessert for the festive table.
Ingredients for the dough:
300 g of flour;
200 g of butter 82.5% (frozen);
200 g of sour cream 20%;
1 tbsp of sugar.
Ingredients for the filling:
1 kg of cherries;
80 g of sugar;
80 g of starch.
Ingredients for the cream:
700 g of sour cream 20%;
300 g of cream 33% (cold);
250 g of powdered sugar;
10 g of vanilla sugar.
Ingredients for decoration:
50 g of dark chocolate;
50 ml of cream.
Preparation
Grate the frozen butter on a large grater and mix with flour and sugar until crumbly. Add sour cream.
Quickly knead a soft dough by folding the ingredients. Wrap in film and place in the refrigerator for 40–60 minutes.
Mix the cherries with sugar, add starch and mix thoroughly.
Divide the dough into 15 parts, roll each into a thin rectangle. Place the filling in the center and carefully roll up into a tube, pinching the edges.
Place the tubes on a baking sheet seam side down and bake in a preheated oven at 190°C for about 20–25 minutes until golden brown. Allow to cool.
Prepare the cream: whip the cold cream with powdered sugar until soft peaks form, then add sour cream and vanilla sugar, gently mix.
Grease the dessert mold with cream, layer the tubes, carefully coating each layer with cream.
Spread the top and sides with cream, forming a 'little house'. Place the cake in the refrigerator overnight.
In the morning, prepare the decoration: heat the cream, add chocolate and mix until smooth glaze forms, pour over the top of the cake.
This dessert is perfect for festive occasions, as well as for cozy evenings with loved ones. The preparation takes a bit of time, but the result will definitely please you. Don't forget to share the flavors with your loved ones, as such desserts are always lacking on the table.
