You will need:
- cucumbers — 1 kg;
- onion — 300 g;
- carrot — 300 g;
- sweet pepper — 300 g;
- tomatoes — 300 g;
- tomato paste — 60 g (1 tbsp with a heap);
- garlic — 2–3 cloves;
- refined oil — 70 ml;
- salt — 20 g (1 tbsp without a heap);
- sugar — 40 g (2 tbsp without a heap);
- black ground pepper — 0.5 tsp;
- vinegar 9% — 15 ml (1 incomplete tbsp).
Cooking method
Grate cucumbers on a large grater or finely chop them, you can leave the skin if desired. Salt and leave for 20 minutes, then place in a colander to drain excess liquid.
Pass carrots, sweet peppers, and tomatoes through a meat grinder or grate. Add the tomato paste to the tomato mixture and stir.
Finely chop the onion. In a large pot, heat the oil, add the onion and carrot, and sauté until transparent. Then add the prepared cucumbers and stew together for 20-25 minutes.
Add the tomato mixture, salt, sugar, and stew for another 30 minutes until thickened. At the end, add pepper, crushed garlic, and vinegar, mix and hold on the fire for another 2-3 minutes.
Immediately distribute the hot caviar into sterilized jars, tightly screw on the lids. No need to wrap — the preparation keeps excellently.
