Salad without mayonnaise: a summer dish recipe

This salad is a great example of how to make a really filling yet light dish without mayonnaise. You will need:

  • cooked or canned beans — 250 g;
  • bell pepper — 200 g;
  • fresh cucumber — 150 g;
  • canned corn — 150 g;
  • salad leaves — 60 g;
  • corn chips or nachos — 90 g.

For the dressing:

  • oil — 2 tbsp;
  • 6% vinegar — 1 tsp;
  • honey — 1 tsp;
  • dried basil — 0.5 tsp;
  • salt, pepper — 0.5 tsp each.

Cooking method

Dice the pepper and cucumber into small cubes. Tear the salad leaves by hand.

Drain the beans and corn from the liquid. In a large bowl, mix all the vegetables and greens.

For the dressing, mix oil, vinegar, honey, basil, salt, and pepper. Stir until homogeneous and drizzle over the salad.

Before serving, add the corn chips to keep them crispy. Serve immediately.
