Ingredients for the Dough:

  • 270 g butter 82%

  • 270 g sugar

  • 225 g eggs

  • 1.5 tbsp honey

  • 338 g flour

  • 75 g almond flour

  • 15 g baking powder

  • 0.5 tsp salt

Ingredients for the Filling:

  • 400 g roasted nuts

  • 700 g various dried fruits

  • zest of two oranges

  • 250 ml rum or liqueur

Spices:

  • 1.5 tsp cinnamon

  • 0.5 tsp ginger

  • 0.5 tsp nutmeg

  • 0.5 tsp ground cloves

  • 0.5 tsp ground cardamom

  • 1 vanilla pod

Preparation

  1. Soak the dried fruits in alcohol a few hours before baking, or better yet — overnight. Mix everything well and close. The dried fruits will swell and become juicy and fragrant.

  2. Beat the butter with sugar using a mixer until light cream. Add the eggs, honey, and vanilla, mixing well.

  3. In a large bowl, combine the dry ingredients. Gradually add them to the liquid mixture. Then add the filling — soaked dried fruits and nuts, gently mixing with a spatula.

  4. Take a round form with a hole in the center, grease it with butter, and dust with flour.

  5. Bake the cake in a preheated oven at 160-165°C for 70-90 minutes.

  6. After baking, pour the cake with rum, liqueur, or sugar syrup; this will enhance the aroma and help retain moisture.
