English Cake
This Christmas cake, according to the author of the recipe, gains better flavor with each passing day, so it is worth baking it in advance to allow it to infuse. The cake turns out moist and rich, with a generous amount of dried fruits and nuts.
Ingredients for the Dough:
270 g butter 82%
270 g sugar
225 g eggs
1.5 tbsp honey
338 g flour
75 g almond flour
15 g baking powder
0.5 tsp salt
Ingredients for the Filling:
400 g roasted nuts
700 g various dried fruits
zest of two oranges
250 ml rum or liqueur
Spices:
1.5 tsp cinnamon
0.5 tsp ginger
0.5 tsp nutmeg
0.5 tsp ground cloves
0.5 tsp ground cardamom
1 vanilla pod
Preparation
Soak the dried fruits in alcohol a few hours before baking, or better yet — overnight. Mix everything well and close. The dried fruits will swell and become juicy and fragrant.
Beat the butter with sugar using a mixer until light cream. Add the eggs, honey, and vanilla, mixing well.
In a large bowl, combine the dry ingredients. Gradually add them to the liquid mixture. Then add the filling — soaked dried fruits and nuts, gently mixing with a spatula.
Take a round form with a hole in the center, grease it with butter, and dust with flour.
Bake the cake in a preheated oven at 160-165°C for 70-90 minutes.
After baking, pour the cake with rum, liqueur, or sugar syrup; this will enhance the aroma and help retain moisture.
Wrap the completely cooled cake in parchment and let it infuse in a dark place. It is best to let it stand for up to four weeks, periodically brushing with alcohol.
The cake can also be decorated with a protein glaze.
Thus, this Christmas cake will not only complement your festive table but will also be a wonderful opportunity to remember warm moments from the past. Its aroma and taste will undoubtedly create a true festive atmosphere in your home.
