Nizhyn Salad for Winter: Grandma's Old Recipe with Crunchy Cucumbers and Dill.
In every Ukrainian family, Nizhyn salad remains one of the favorite preparations passed down from generation to generation. This recipe is perfect for the winter period: the cucumbers stay crunchy, and the addition of fresh dill and tender pickled onions gives it a unique flavor.

Ingredients needed:
- cucumbers - 2 kg;
- onion - 700 g;
- dill - a bunch (50-100 g);
- salt - 1 tbsp.
For each jar (500 ml):
- salt - 1 tsp.;
- sugar - 1 tsp.;
- 9% vinegar - 2 tbsp.;
- refined oil - 1 tbsp.;
- bay leaf - 1 piece;
- black peppercorns - 4-5 pieces.
Cooking Method
Slice cucumbers into thin rounds. Chop the onion and cut it into half rings.

Finely chop the dill. Mix all ingredients in a large bowl, add 1 tablespoon of salt, mix well, and let it sit for 1.5-3 hours to allow the vegetables to release juice and soak in the flavor.

Prepare the jars: wash, sterilize, and dry them. Place a bay leaf and peppercorns on the bottom of each jar. Then, tightly pack the cucumber salad along with its juice. Add 1 tsp of sugar, 1 tbsp of refined oil, and 2 tbsp of vinegar to each jar.

Cover the jars with lids, place them in a large pot with water (put a towel on the bottom), bring to a boil, and sterilize for 20 minutes from the moment of boiling.

If using one-liter jars, increase the time to 30 minutes.

After sterilization, tightly screw the jars closed, turn them upside down, and cover with a towel until fully cooled. Store in a cool, dark place.
