You will need:

  • cottage cheese — 600 g;
  • sugar — 60 g;
  • flour — 60 g + 1–2 tbsp for shaping;
  • egg yolks — 2 pcs;
  • vanilla sugar — 20 g;
  • salt — a pinch;
  • vegetable oil — for frying.

Cooking method

If the cheese is grainy, rub it through a sieve or blend it with a blender until smooth. If the cheese is too wet, squeeze it through cheesecloth.

In a large bowl, combine the cheese, egg yolks, sugar, vanilla sugar, a pinch of salt, and 60 g of flour. Mix well with a spoon and then with your hands until you get a homogeneous dough.

Sprinkle the work surface with flour. Shape the dough into a sausage and cut it into even pieces of 40 g each. Roll each piece into a ball, slightly flatten it, and give it the shape of a pancake. Dust all sides with flour.

Heat a frying pan with a small amount of oil. Fry the cheese pancakes over medium heat for 2–3 minutes on each side until golden brown.

Serve hot with sour cream, honey, or your favorite sauce.
