You will need:
- zucchini - 2 pcs. (approximately 700 g);
- tomatoes - 2 pcs.;
- feta cheese - 100 g;
- green onions - a bunch;
- dill - a bunch.
For the zucchini dressing:
- oil - 3 tbsp.;
- mustard - 1 tsp.;
- salt - ⅓ tsp.;
- favorite spices - to taste.
For the final dressing:
- oil - to taste.
Cooking Method
Cut the zucchini into medium cubes, arrange them on a baking sheet lined with a Teflon mat, and lightly grease with oil. Prepare the marinade for roasting: mix oil, mustard, salt, and spices until homogeneous. Pour the sauce over the zucchini, mix well, and spread evenly on the baking sheet.
Bake in a preheated oven at 180 °C for about 15 minutes until the zucchini is soft. While the zucchini cools, cut the tomatoes into cubes of approximately the same size. Chop the dill and green onions. In a salad bowl, lay out the roasted zucchini, add tomatoes, and herbs. Dress with a small amount of oil.
Cut or crumble the feta cheese by hand and add it to the salad. There is no need to salt because the feta and zucchini already contain enough salt.
