Sugar — 2 tablespoons
Cocoa powder — 2 tablespoons
Butter (frozen) — 80 g
For the sour cream filling and stabilization
Fatty sour cream (20%) — 500 g
Sugar — 3 tablespoons
Vanilla sugar — 2 teaspoons
Gelatin — 10 g
Cold water — 4 tablespoons
For the filling
Almonds — 100 g
Dried plums — 100 g
Dark chocolate — 100 g
Process of making the dessert
Creating the base
First, we prepare the base. In a bowl, sift the flour, add cocoa powder and sugar, mixing thoroughly until homogeneous.
Next, grate the frozen butter on a fine grater, dusting it with flour.
Quickly knead the butter-flour mixture by hand to form a uniform crumb.
Spread the crumb on a heated non-stick skillet and fry, stirring constantly, until golden brown (about 5 minutes). After that, let it cool.
Preparing the filling and cream
While the crumb cools, we prepare the cream and filling.
In a separate container, soak the gelatin in cold water to swell.
Prepare the filling: chop the dried plums into small pieces, crush the almonds, and chop the chocolate into small bits.
For the cream, whip the sour cream with sugar until fluffy. Heat the swollen gelatin in the microwave for one minute to dissolve it.
Add the dried plums, almonds, chocolate, and vanilla sugar to the cream. Mix everything thoroughly and quickly add the dissolved gelatin.
Forming and stabilizing the dessert
Choose a cake mold. First, place about half of the chocolate crumb at the bottom.
Pour the cream with the filling on top and cover with the remaining crumb, forming the top layer.
Place the dessert in the refrigerator to stabilize for 2-3 hours until it sets. Then it can be served on the holiday table, impressing with its appearance and delicate taste.
