You will need:
- cucumbers — 1.5 kg;
- mushrooms — 1 kg;
- sweet pepper — 1 kg;
- onion — 500 g.
For the brine:
- water — 2.5 L;
- salt — 1 cup (250 g).
For the marinade:
- water — 3 cups;
- sugar — 2.5 cups;
- 9% vinegar — 300 ml.
Cooking method
Thoroughly wash the cucumbers and cut them in half with a decorative knife. If the cucumbers are very small, leave them whole — they will look good in jars.
It is better to take small mushrooms, as they retain their shape best. Cut large mushrooms into four pieces and medium ones in half. Clean the pepper from seeds and cut into strips or cubes. Peel the onion and cut into half-rings, and if the onions are large, divide them into quarters.
In a large bowl, pour in 2.5 liters of water, dissolve the salt, and add all the prepared vegetables and mushrooms. Mix thoroughly and let it sit for 2 hours. During this time, the vegetables will release juice, becoming crispy and flavorful. Occasionally, the mixture should be stirred.
After 2 hours, drain the brine. Prepare the jars: wash them well, sterilize, and dry them. Fill them with vegetables and mushrooms to the brim, shaking them slightly for compaction. Prepare the marinade: in a pot, mix water, sugar, and vinegar. Put it on the stove and bring it to a boil until the sugar is completely dissolved. Immediately pour the hot marinade over the vegetable mixture in the jars to the top.
Cover the jars with lids and place them in a large pot with warm water for sterilization. Place a towel on the bottom of the pot to prevent the jars from cracking. The water should reach the 'shoulders' of the jars.
After boiling, sterilize half-liter jars for 10 minutes and liter jars for 15 minutes. Then tightly roll on the lids, turn the jars upside down, and wrap them with a blanket until completely cool.
