You will need:
- eggs — 2 pcs;
- salt — 0.5 tsp;
- sugar — 1 tbsp;
- flour — 130 g (1 cup);
- milk — 400 ml (2 cups);
- vegetable oil — 2 tbsp.
For the filling:
- onion — 1 large or 2 medium;
- minced meat — 500 g;
- salt, pepper — to taste.
Cooking method
In a deep bowl, whisk the eggs with salt and sugar. Add the flour gradually while pouring in the milk, constantly mixing to avoid lumps.
Add the oil and let the batter rest for 10-15 minutes.
Meanwhile, prepare the filling: finely chop the onion and mix it with the minced meat. Season with salt and pepper to taste. You can add a little water or broth to make the filling juicier.
In a well-heated skillet, fry the pancakes — thin, elastic, so they're easy to wrap. On each pancake, place some filling and fold it into an envelope.
Fry the benderiki in the skillet on both sides until golden brown or bake in the oven at 180°C for about 10-15 minutes.
