Dear gourmets, today we offer you to try an incredibly delicious baked eggplant appetizer that combines the tenderness of eggplants, the aroma of tomatoes, the spiciness of garlic, and a mysterious piece of cheese. This dish will be perfect for a casual dinner, festive table, or a meatless breakfast. Plus, it can be enjoyed both warm and chilled. What could be better?

For preparation you will need:

  • eggplants — 2-3 pcs;
  • tomatoes — 2-3 pcs. (medium size);
  • garlic — 3-4 cloves;
  • hard cheese — 50-100 g;
  • olive or sunflower oil — 2-3 tbsp;
  • salt, pepper — to taste;
  • fresh herbs (parsley or dill) — to taste.

How to cook it?

Cut the eggplants into slices about 1 cm thick, salt them, and leave for 15-20 minutes to remove bitterness. Then rinse with cold water and place on a paper towel. Cut the tomatoes into slices as well.

Grease the prepared baking dish with oil or line it with parchment paper. Evenly arrange the eggplant slices in one layer.

On each slice of eggplant, place a slice of tomato, sprinkle with salt, pepper, and chopped garlic. Then sprinkle with grated cheese.

Bake in a preheated oven at 180 °C for about 20-25 minutes until the eggplants are soft, and the cheese melts and browns. Before serving, sprinkle with fresh herbs. Enjoy!
