- SUBSTITUTE AND SAVE: Due to rising prices for butter and sugar, Reshmi Bennett from Anges De Sucre bakery suggested her Hero Sponge recipe:
- Preheat the oven to 150°C.
- In a bowl, place three medium eggs.
- Add 80g sunflower or vegetable oil, 120g low-fat natural yogurt, 100g milk, and 20g vanilla extract.
- Whisk until smooth, then add 300g granulated sugar and 5g salt.
- Whisk until combined.
- Sift 350g plain flour and 15g baking powder.
- Mix until smooth. Grease two eight-inch cake pans and evenly distribute the batter.
- Bake on the middle shelf for 27-29 minutes.
- When a wooden skewer inserted in the center comes out clean, remove from the oven and cool.

'Leftover cake can be used to make French toast or baked to create cakes for tea. Crumbs from the dough can be frozen and used in desserts.'
