Ukrainians were taught how to recognize real butter from counterfeit

Professional biochemist Hlib Repich shared this on his Instagram.

Often, the quality of butter raises doubts due to the possibility of cheaper ingredients being added, such as palm oil or margarine.

Repich recommends first evaluating the color of the butter. It should have a uniform light yellow color.

'If you notice unusual shades or spots, the product may contain other fats,' says the expert.

Next, he recommends using hot water. Add a piece of butter to a glass of water and stir.

'Before examining the butter, be sure to smell the solution. The butter should have a pleasant, milky smell with notes of cream,' explains Repich.

The presence of foreign odors may indicate the addition of other ingredients to the butter. Also, the cloudiness of the solution may indicate the presence of milk protein, but this is not an accurate indicator, as such an effect may also occur in margarine with dairy components.

The expert notes that the common belief that real butter should completely dissolve in water is incorrect. Butter contains 73% fat, which does not dissolve in water, so the fat will float on the surface.

Repich also recommends paying attention to the texture and taste of the butter.

To compare the quality of butter and margarine, simple tests can be conducted:

Margarine usually has a chemical, persistent odor, unlike butter with a delicate creamy taste.

Margarine in solution will be almost transparent; the absence of dairy components indicates its presence.
