Prices for borscht set have skyrocketed 26 times: what the statistics showed.
Price increase for borscht vegetables in Ukraine
According to inkorr.com: In Ukraine, there is a significant rise in prices for vegetables that are part of the traditional borscht set.
According to the State Statistics Service, this information was announced by the head of the agency, Arsen Makarchuk, in an interview on channel '24'.
Prices for the borscht set have increased from 7 hryvnias in 1997 to 185 hryvnias in 2025, which is approximately a 26-fold increase.
Especially rapid price increases for vegetables began in 2022. For example, cabbage rose by 6.2%, onions by 19.5%, and beets by 15.6%. The price of carrots increased the most, almost doubling, while potatoes became 2.7 times more expensive.
In 2025, a kilogram of pork costs already 216.45 hryvnias, and sour cream (350 g) - 53.5 hryvnias, which significantly differs from prices in 1997.
'Data from the State Statistics Service regarding the consumer price index are calculated according to a methodology that is scientifically substantiated and unified for Eurostat. Moreover, it has been verified and confirmed by Eurostat and the International Monetary Fund.'
'If you take 3-5 key products, inflation for them will significantly differ. The borscht set or the Big Mac Index are excellent indicators to confirm this thesis.'
The head of the State Statistics Service notes that independent researchers often use a limited methodology, focusing on individual products. He emphasizes that for an adequate assessment of inflation, it is important to consider a wide range of household expenses, including services that affect everyday life.
The State Statistics Service does not distinguish between domestic and imported goods, including all items in its calculations for consumer prices. This is important for an objective assessment of inflationary processes in the country.
Thus, the increase in prices for borscht vegetables reflects the overall inflation trends that also affect the cost of other products, such as pork and sour cream. The head of the State Statistics Service calls for a comprehensive approach in analyzing inflation, emphasizing the need to consider household expenses on various goods and services.
