The price of borscht has skyrocketed by 27%: pork outweighed the drop in vegetable prices.

According to ТСН: The cost of preparing three liters of borscht in December 2025 is 196 hryvnias. The main factor influencing the price remains pork ribs, which account for over 60% of the cost of this dish. Meanwhile, vegetables in warehouses currently cost significantly less than last year.

The situation in the vegetable market remains stable thanks to sufficient reserves of quality products with farmers.

Vegetable Prices

A significant decrease is observed:

• cabbage - by 73%,
• carrots - by 63%,
• onions - by 58%,
• potatoes - by 54%.

Even despite the substantial reduction in vegetable prices, the cost of borscht has risen by 27% compared to last year. In addition to expensive pork ribs, consumers are also affected by the prices of tomato paste and sunflower oil, which have increased by 22% over the year. Although vegetables have halved in price, they account for a negligible share of the total costs of preparing the national dish.

Moreover, it was previously reported about the rise in bread prices in Ukraine. Among the reasons are blackouts and logistics problems. The cost of some types of bread may increase by more than 20%.

Thus, despite the decrease in vegetable prices, the rise in prices for other ingredients makes borscht more expensive than in the previous year. The situation on the bread market also raises concerns, which may affect the consumption habits of Ukrainians in the near future.
