The study identified three compounds in coffee: cafestol A, B, and C. These compounds have the ability to block the enzyme alpha-glucosidase, which is responsible for breaking down carbohydrates in the intestine. This, in turn, allows for reduced blood glucose levels after eating.
Moreover, consuming three to five cups of coffee daily may reduce the risk of developing type 2 diabetes. According to the World Health Organization, over 400 million people worldwide suffer from diabetes.
