Horseradish Shortage in Ukraine: Why the Traditional Condiment is Disappearing and Who is Exporting It

According to ТСН: Ukraine is experiencing a significant horseradish shortage. Due to a lack of experience among farmers, most of the raw material is traditionally purchased from villages, but now they have almost nothing left.

According to Lyubov Semenyuk, who has been growing this crop for about 50 years, the sharpest horseradish traditionally grows in Podillia. Previously, collectors would buy around a thousand tons of root from locals here, but now it is not possible to find even 600 tons across the country.

The harvesting season lasts from September to May, but this year's summer drought has significantly complicated the situation — the earth has dried up, and the machinery could not process it.

“The Village is Dying, No One to Dig”

In the villages of Podillia, where horseradish has always brought stable income, it is now harvested half as much. Collector Larysa Maslai notes that she used to gather 20-25 tons, but now only 10-12 tons.

The main reason is that few people are willing to work in the fields. Many homes are abandoned, and the youth have left the villages. Additionally, horseradish has also disappeared from gardens due to the use of herbicides, which are actively employed in soybean cultivation.

Attempts to Establish Own Cultivation Have Failed

To reduce dependence on supplies from the villages, processors decided several years ago to sow their fields with horseradish. They even imported seedlings from Hungary, but without experienced specialists, this technology did not work, and all the horseradish perished.

Producers note that their Hungarian partners refused to share their experience because they do not want new competitors in the European market.

Ukrainian Horseradish is Massively Exported to the EU

The shortage of horseradish is exacerbated by resellers who buy the root from peasants and send it to Poland and Germany. There, it is processed, while Ukrainian enterprises have to look for alternatives.

The Only Solution — Imported Raw Materials

While breeders are trying to grow a Ukrainian variety and find ways of proper cultivation, processors are ready to sign contracts with farmers for the entire future harvest and pay competitive prices. To avoid a shortage of the popular horseradish sauce with beet, part of the production is supported by imported raw materials from Europe.

The situation with horseradish shortage in Ukraine reflects broader economic trends related to changes in the agricultural sector. Producers are concerned about the decreasing availability of raw materials and the need to find new solutions to support production. It is crucial that transparent and effective cooperation mechanisms between farmers and processors become the foundation for stability in this sector.
