Ben & Jerry's created ice cream that doesn't melt in the sun: what is the secret.
A new ice cream has appeared in Britain that doesn’t melt in the sun. This marvel was created by the brand Ben & Jerry's and Magnum. Experts from the University of Guelph in Canada explained that the secret of success lies in the special composition of the product.
According to them, the low freezing temperature of water is achieved thanks to the sugar dissolved in the ice cream. Moreover, the dissolution of sugar and lactose in water allows the ice cream to remain soft and stable. Scientists pointed out that the use of modified starch that envelops water and fat plays a key role in stabilizing the product.
'It’s all about stability,' explained the experts.
This approach not only preserves the taste and texture of the ice cream but also makes the product more resistant to environmental impacts. Earlier, a unique Ice Cream Museum was opened in Singapore. It is also worth noting that in Germany there is no longer 'Moscow' ice cream.
The new ice cream, which remains soft in the sun, presented in Britain, has impressed gourmets and scientists with its innovation. The achieved results in the field of stability and taste qualities have intrigued consumers and opened new prospects for the food industry.
