How to distinguish genuine caviar from counterfeit: a simple hot water test.

Food quality expert Olena Sydorenko explained on the air of 'Kyiv24' how to check the naturalness of caviar. She clarified that to do this, you need to pour hot water over the caviar. If the caviar is natural, the solution will be cloudy as the protein mixes and takes on a milky shade. If it is caviar made from gelatin or alginate additives, it will simply dissolve, and a layer of fat or broth will appear on the surface that's left inside.
'The taste of natural caviar is delicate and barely pronounced, actually with a light fishy taste. On the other hand, artificial caviar has a rather coarse fish taste,' emphasized the expert.
Olena Sydorenko also recommends buying caviar in glass containers since 'a can is a cat in a sack.'
The expert's explanation emphasizes the importance of careful selection of caviar, as the quality of the product can significantly influence the taste properties of the dish. Given the possible incorrect additives in the composition, consumers should not only pay attention to this advice but also carefully read labels and look for certified products.
