Often, manufacturers sell 'structured caviar', which is made from natural products, although it is difficult to call it real caviar. Its producers may add red dyes or gelatin additives to improve the appearance and structure of the product. Such and other labels must be indicated on the caviar label. It is better to avoid purchasing caviar that does not have such labels, as it may have a worse taste.
