According to TSN.ua: In Ukraine, the 2026 birch sap collection season is expected to run from the second week of March through the first days of April. This short window offers the best conditions for tapping, but following specific guidelines is crucial to avoid harming the trees and to ensure a high-quality yield. For those unfamiliar, birch sap is a traditional spring tonic in Eastern Europe, prized for its refreshing taste and natural nutrients.
Key Harvesting Guidelines
The season begins when daytime temperatures are consistently warm but nights still see light frosts. To protect tree health, sap should be collected before the first green leaves appear. Only birch trees with a trunk diameter between 25 and 30 centimeters are suitable for tapping—smaller trees may suffer damage during the process.
Proper preparation of tools is essential. Drill a hole on the north side of the trunk, 30 to 40 centimeters above the ground, and make it 4 to 5 centimeters deep to allow a steady flow of sap. Following these steps minimizes harm to the tree and promotes a successful harvest.
